Community History\tBo Suak community, A quiet community in the middle of the valley, which is only 15 minutes away from Nan city. There is a living wisdom that is passed on from generation to generation. The artistic prosperity of the people in the past has been restored from the excavation of ancient kilns, resulting in the establishment of a museum to display the found pottery. Leaf-wrapped herbal salad bites (Miang Kham) with sugarcane: a dish from Ban Baka village cultivated with local, high-quality sugarcane. The notable thing about this dish is the filling of the leaf which is made with high-quality sugarcane mixed with roasted coconut which makes it taste sweet and natural. It can be eaten with fresh fruit, chill, garlic, lime and salad leaves which complement the Miang Kham dish. It is smooth and full of fragrant herbs. Moreover, the special thing about the production process of sugarcane juice at Ban Baka village is the unique use of the buffalo to turn the gears in the old-school style sugarcane machines. This process has been handed down from our ancestors. Sugarcane juice in Nan city is also an important element used in religious ceremonies. Tourists should come and try the authentic sugarcane juice at least once.2. Northern Thai Sausage (Sai Oua) is an appetizer with chilli paste from ฺBan Na village. Selecting the raw meat is a meticulous process as it must not be too oily. Herbs are said to be the highlight of northern Thai sausage, which must be home-grown. The herbs must be mixed together in large quantities in order to make them fragrant. We make sure the meat is safely and locally sourced and is free from chemicals - which makes our northern Thai sausage different from the rest. For tourists that must know about this dish, there are people in the community who are happy to teach every step of the process. After the sausage is produced it is taken to the grill and it is certainly safe to eat for a long time. The process of making northern Thai sausage is not only a source of happiness and fun but provides knowledge about how the community preserves food and is a way to promote the local folk wisdom of Ban Baw Suak village too.Product of Bo Suak community 1.
